Ingredients

  • 1 1/4 cup all purpose flour

  • 3/4 cup rye flour

  • 1 tsp baking powder

  • 1 tsp salt

  • 1 tablespoon sugar

  • 5 tablespoons olive oil (plus more for brushing)

  • 1/2 cup milk

  • Everything bagel seeds or sesame seeds (optional)

Directions

  1. Preheat oven to 400 degrees Fahrenheit.

  2. In a mixing bowl, whisk together the all purpose flour, rye flour, baking powder, salt, and sugar.

  3. Add the olive oil and mix with a stand mixer or hand mixer, until the dough is crumbly. Then add the milk and continue mixing until fully incorporated.

  4. Transfer the dough to a lightly floured surface. If it is still crumbly, knead the dough to get it to stick to itself.

  5. divide the ball of dough into three equal sections.

  6. On a piece of parchment paper, flatten the first section into a disk shape. Place a second piece of parchment paper on top, and using a rolling pin, flatten the dough as thin as you can. Try to get it to 1/16th of an inch if possible.

  7. Remove the top parchment paper and brush with a thin layer of olive oil. If desired, sprinkle the seeds on top now.

  8. cut the dough into whatever shape you’d like the crackers to be. You can use a pizza cutter or a bench scraper here.

  9. Carefully transfer the parchment paper with the crackers on it to your baking sheet. Place in the oven and bake for 6-7 minutes, until the crackers have started browning on the edges.

  10. Repeat with the other 2 sections of dough.

  11. Enjoy!
