Heirloom Unsifted Yellow Cornmeal (Coarse)
Our heirloom yellow unbolted cornmeal is made from a variety of corn known as Jackie Freeman Dent Corn.
Of mysterious origin but seemingly bred by it’s namesake in western Carolina somewhere around Byson City; this is an old-timey variety that has a higher oil content than most other dent corns, giving it a rich and unctuous flavor. The kernels also have a radiant copper hue that mill into a stunning meal and cook up into a pone to write home about. Our unbolted cornmeal is ground in small batches, a little finer than we do for grits and meal. In this case, we don’t separate the two, resulting in a pleasantly coarse, “old-fashioned” cornmeal.
We have a limited supply of this corn, and are only offering a very limited run of unbolted yellow cornmeal.
